My Bread and Ingredients


ALLERGENS – New legislation

The Food Information Regulations 2014 now require all food businesses to make customers aware of all the allergens present in their food. The ingredients in my breads are clearly stated in each email (and below) and whilst I aim to keep each type of bread separate, they are all prepared in an environment where there may be nuts and sesame seeds. All my loaves are sourdough unless stated, that is, produced using a natural wheat or rye leaven rather than by using added yeast. All breads are made by hand and slowly fermented for maximum flavour, nutrition and digestibility.

Unlike most commercial bread, my bread is made with only flour, water and sea salt (all other ingredients are stated) and without hidden additives such as added enzymes and improvers.

These days bread made without the use of processing aids or any other artificial additives is defined as ‘real bread’. If you have found commercial bread difficult to tolerate, try ‘real’ bread, it could just be modern production techniques that are the problem.

All my breads are made with organic flour as locally produced as possible.
  • Untreated stoneground wheat flours are from Maud Fosters Mill, Boston, Lincolnshire, Shipton Mill in Gloucestershire or lovely very local Cambridgeshire flour from Foster’s Mill, Swaffham Prior (milled from grain from Hammonds End farm, Harpenden)
  • Wholegrain rye flour is from Shipton Mill or Foster’s Mill, Swaffham Prior, Dove’s farm organic wholegrain rye flour or Shipton Mill organic wholegrain rye. All rye flour used is 100% whole or dark rye.
  • Spelt flour is untreated and stoneground and milled by Foster’s Mill, Swaffham Prior

All other ingredients are organic or fair trade and locally sourced where this is possible.

Romsey Wild/Really white

Rustic white/Campagne with rye

Wholemeal/brown breads (usually available as 450g and 820g loaves)

Fifty fifty
Wholemeal flour (50%), white flour (50%), water, sea salt
A chewy crusty loaf with a lighter texture than wholemeal

Malthouse (The English loaf)
Malted brown flour (88%), wholemeal flour (22%), water, sea salt
What could be called the archetypal British loaf? Granary by another name.

Miller’s/90% wholemeal cob
Wholemeal flour (90%), water, white flour (10%), sea salt

Sesame wholemeal
Wholemeal flour (68%), white flour (28%), rye flour (4%), water, sesame seeds (6%), sea salt

Sunflower wholemeal
Wholemeal flour, white flour (11%), water, sunflower seeds (9%), sea salt
A wholemeal loaf with sunflower seeds for a bit more of a bite.

Seven seed
White flour (45%), wholemeal flour (45%), water, rye flour (10%), oat flakes (2%), sunflower seeds (2%), pumpkin seeds (2%), sesame seeds (1%), linseed (1%), sea salt
A multi-grain loaf containing all the goodness of seven seeds and grains

Whole spelt with sesame
Whole spelt flour (95%), rye flour (5%), water, sesame seeds (6%), sea salt

Wholemeal light rye (5%)
Wholemeal flour, water, white flour (20%), rye flour (3%), sunflower seeds (2%), rye flakes (2%), sea salt

Wholemeal light rye (5%) with caraway and cumin

Moist loaf with a slight sweetness, good on its own or with savoury or sweet foods

Linseed loaf

Olive and pumpkin seed bread

Pain au levain with spelt and sesame

Raisin and walnut bread
White flour, wholemeal flour (25%), water, flame raisins (8%), walnuts (8%), sea salt

Roast potato and rosemary (& nigella seeds)
White flour, water, roasted potatoes (14%), fresh rosemary, olive oil, sea salt, nigella/kalonji seeds, black pepper

Roast potato and rosemary & chilli
White flour, wholemeal flour (50%), water, roasted potatoes (14%), fresh rosemary, olive oil, sea salt, fresh chilli, black pepper

Roast sweet potato and cumin bread
White flour, wholemeal flour (10%), water, roasted sweet potatoes (7%), roasted potatoes (7%), olive oil, sea salt, cumin seeds, black pepper

Sesame loaf

Spiced very fruity loaf
White flour, water, raisins (15%) currants (5%), wholemeal flour (5%), sea salt, cinnamon, nutmeg, cloves, allspice

Stilton and walnut
White flour, wholemeal flour (25%), water, stilton (12%), walnuts (8%), sea salt

Sultana and toasted hazelnut
Wholemeal flour (56%), white flour (39%), rye flour (5%), water, golden raisins/sultanas (15%), toasted whole hazelnuts (10%), sea salt

Sundried tomato and red onion bread with tamari toasted sunflower seeds
White flour, water, sun dried tomatoes (10%), tomato puree (8%), wholemeal flour (5%), red onion (4%), sunflower seeds (3.6%), olive oil, tamari, chilli powder, turmeric, sea salt
Tomato and onion bread with a swirl of sundried tomato paste

Vegetable bread
White flour, wholemeal flour (10%), water, roasted potatoes, roasted sweet potatoes, olive oil, sea salt, cumin seeds, black pepper
May include parsnips, carrots, beetroot, sweet potato, red onion, pumpkin

Walnut bread
White flour, wholemeal flour (25%), water, walnuts (10%), sea salt

Rye breads (or rye and wheat based) usually available as 450g and 820g loaves

Borodinsky (100% rye bread)
Rye flour (100%) water, barley malt extract, molasses, coriander seeds, sea salt
The story goes that this rye bread was made by the wife of a Russian general, using coriander seeds ripening in the September sun, to encourage the troops on the eve of the battle of Borodino and became associated with their victory over Napoleon.

Just rye/100% Wholemeal rye
Rye flour (100%) water, sea salt  (Trace of sunflower oil used to oil bread tins)
Traditional wholemeal rye loaf

Pumpernickel (100% rye with rye groats)
Kibbled rye, rye flour (100%) water, sea salt (Trace of sunflower oil used to oil bread tins)
Dense bread made from mainly chopped rye, ideal sliced very thinly

Seeded 100% rye
Rye flour (100%) water, sunflower seeds (5%), pumpkin seeds (3%), sesame seeds (3%), sea salt

A wholemeal rye loaf with a mixture of seeds

Sisu (100% dark rye bread with caraway seeds)

Traditional Finnish rye loaf, ‘Sisu’ apparently translates as ‘guts’ or ‘perseverance’

Wholegrain rye (100% with chopped/kibbled rye)

Kibbled rye gives more texture

Wholemeal half rye (50%)
Rye flour (50%), wholemeal wheat flour, water, sea salt
Moist dense loaf with lots of flavour

N.B. The rather confusing convention is that where a percentage of flour is given, the figure relates to its proportion of all the flours in a recipe, whilst percentages of other ingredients relate to their proportion in the whole recipe.

    Anyway just a quick hello and WOW! I’ve just seen the list of breads you do (not all at once I know), and it is amazing. I have obviously tried your delicious bread, but I am seriously, seriously impressed. I’m sure you’ve been told a million times, but brilliant work Alison..you deserve a mega gold star. I love everything about this the type of business…
